Baked Peach "Cobbler"
Ingredients:
Filling
8 ripe peaches (or 2 small bags of frozen peaches, thawe... I use the one
from Kroger or trader Joes)
juice of ½ lemon
4 soft dates, soaked
vanilla bean, scraped (optional)
dash ground cinnamon
handful or two of whole wheat flour (optional)
Topping:
2 cups nuts (I used half walnuts + half pecans)
1 cup soft dates (or figs)
1 tsp. ground cinnamon (or more to taste)
1/2 – 1 cup oatmeal
pinch sea salt
Directions: Preheat oven to 350 degrees F, grease a shallow casserole dish with olive oil
1. Cut up five peaches into bite-sized chunks. Set aside.
2. Place half to three quarters of the peaches in a food processor with the rest of the filling ingredients. Blend into a smooth sauce. Pour over cut peaches and gently fold to combine. Stir in flour (optional). Place in greased baking dish.
3. Rinse the food processor and add the topping ingredients. Pulse until a chunky crumble-like consistency is reached, or blend to your liking. Stir in oatmeal. Sprinkle over the cut peaches.
4. Bake 25 - 30 min or until golden.

Curried White Bean and Tomato Soup
1 T olive oil
1 cup chopped onion
1 T curry powder
3/4 tsp. ground ginger
2 15 oz. cans white beans, rinsed and drained
1 28 oz. can diced tomatoes
1 3/4 cup water
Directions:
Heat oil in a large saucepan over medium heat. Add onions and cook until tender. Stir in curry powder and ginger. Add remaining ingredients. Bring to a boil then reduce heat to low and simmer 15 min.
Serve with "fried" bread (recipe below)
Tortillas / "Fried" bread
Ingredients:
2 cups whole wheat flour
2 T olive oil
½ - 1 tsp. salt
1 -1½ cup water
1. Mix flour, salt and olive oil in a medium bowl.
2. While stirring with a fork, slowly add enough water to form a soft dough.
3. Roll out or shape by hand ½ a handful of dough into a flat round on a floured surface.
4. Heat an iron skillet on medium high. Place dough in pan and cook for
about 1 min. on each side.
TIP: Bake the tortillas at 400 degrees F until crisp for whole wheat chips.
Make great “bread sticks” by adding 1 tsp powdered garlic, 1 tsp. basil and 1 tsp. oregano with the salt and oil. Add water. Roll out entire ball of dough then cut into ½ - 1 inch x 3 inch strips. Place onto floured cookie sheet and bake until lightly brown, flipping once.
