Potato Soup

Just wanted to give you all another "Chilly day" soup idea. Last week, my hubby and I needed something to warm us up.  All I could think about was potato soup. So I made some that met the Daniel Fast criteria... and boy did it hit the spot!

Here is my recipe!

Potato Soup

Ingredients:
4 - 6 medium/large potatoes, chopped (I used red)
1 large carrot, chopped
1 T olive oil
1 onion, diced
2 stalks celery, chopped
4 - 6 cups vegetable broth (or 4 cups broth + 2 cups water)
1 cup unsweetened soy, almond, coconut milk 
Braggs liquid aminos
parsley
pepper

Sauté onion and celery in the olive oil until tender. Add chopped potatoes, carrots and broth. Cook on medium-high until potatoes are fork tender. Add Braggs, parsley and pepper to taste. Take off heat and mash with a potato masher until desired consistency. Add milk and heat through.

Enoy with a mixed greens salad!
