Potato Soup

Just wanted to give you all another "Chilly day" soup idea. Last week, my hubby and I needed something to warm us up.  All I could think about was potato soup. So I made some that met the Daniel Fast criteria... and boy did it hit the spot!

Here is my recipe!

Potato Soup

Ingredients:
4 - 6 medium/large potatoes, chopped (I used red)
1 large carrot, chopped
1 T olive oil
1 onion, diced
2 stalks celery, chopped
4 - 6 cups vegetable broth (or 4 cups broth + 2 cups water)
1 cup unsweetened soy, almond, coconut milk 
Braggs liquid aminos
parsley
pepper

Sauté onion and celery in the olive oil until tender. Add chopped potatoes, carrots and broth. Cook on medium-high until potatoes are fork tender. Add Braggs, parsley and pepper to taste. Take off heat and mash with a potato masher until desired consistency. Add milk and heat through.

Enoy with a mixed greens salad!

Week 2

I hope everyone is doing well on this snowy winter day! Here are some new recipes to add to your stock pile for this week. The Curried White Bean Soup is perfect to warm up with!

Baked Peach "Cobbler"


Ingredients:
         Filling
                  8 ripe peaches (or 2 small bags of frozen peaches, thawe... I use the one
                     from Kroger or trader Joes)
                  juice of ½ lemon
                  4 soft dates, soaked
                  vanilla bean, scraped (optional)
                  dash ground cinnamon
                  handful or two of whole wheat flour (optional)

         Topping:
                  2 cups nuts (I used half walnuts + half pecans)
                  1 cup soft dates (or figs)
                  1 tsp. ground cinnamon (or more to taste)
                  1/2 – 1 cup oatmeal
                  pinch sea salt

Directions: Preheat oven to 350 degrees F, grease a shallow casserole dish with olive oil

1. Cut up five peaches into bite-sized chunks. Set aside.
2. Place half to three quarters of the peaches in a food processor with the rest of the filling ingredients. Blend into a smooth sauce. Pour over cut peaches and gently fold to combine. Stir in flour (optional). Place in greased baking dish.
3. Rinse the food processor and add the topping ingredients. Pulse until a chunky crumble-like consistency is reached, or blend to your liking. Stir in oatmeal. Sprinkle over the cut peaches.
4. Bake 25 - 30 min or until golden.

Enjoy!



Curried White Bean and Tomato Soup

1 T olive oil
1 cup chopped onion
1 T curry powder
3/4 tsp. ground ginger
2 15 oz. cans white beans, rinsed and drained
1 28 oz. can diced tomatoes
1 3/4 cup water


Directions:
Heat oil in a large saucepan over medium heat. Add onions and cook until tender. Stir in curry powder and ginger. Add remaining ingredients. Bring to a boil then reduce heat to low and simmer 15 min.

Serve with "fried" bread (recipe below)




Tortillas / "Fried" bread
         Ingredients:
            2 cups whole wheat flour
            2 T olive oil
            ½ - 1 tsp. salt
            1 -1½ cup water


1. Mix flour, salt and olive oil in a medium bowl.
2. While stirring with a fork, slowly add enough water to form a soft dough.
3. Roll out or shape by hand ½ a handful of dough into a flat round on a floured surface.
4. Heat an iron skillet on medium high. Place dough in pan and cook for  
    about 1 min. on each side.

TIP: Bake the tortillas at 400 degrees F until crisp for whole wheat chips.
Make great “bread sticks” by adding 1 tsp powdered garlic, 1 tsp. basil and 1 tsp. oregano with the salt and oil. Add water. Roll out entire ball of dough then cut into ½ - 1 inch x 3 inch strips. Place onto floured cookie sheet and bake until lightly brown, flipping once.

Day 3 Menu!

Here are the recipes to inspire your cooking for day 3!
Tofu Scramble

Tofu is a great source of protein. In this recipe, the tofu will pick up the fresh flavors from the vegetables. This recipe is perfect for a little ketchup, but most brands have sugar in them. So using a little tomato paste is a great addition.
         Ingredients:

            1 box firm tofu
            1 zucchini, diced small
            1 tomato, diced
            1/2 onion, diced
            1 red bell pepper, diced
            2 green onions, finely sliced
            1 tablespoon fresh cilantro, minced
            1 clove garlic, minced
            Salt and pepper to taste
            Tomato paste if desired


Preparation:
                  1. Spray pan with 100% olive oil spray
         2. Add all ingredients and fry until vegetables are soft.
         3. Salt and pepper to taste
         4. Serve with tomato paste

Tip: You can add lots of different vegetables to this recipe including broccoli, carrots, and mushrooms.

Hummus
        
         Ingredients:
            10 oz. garbanzo beans, drained (reserve about 4 Tablespoons juice)
            2 cloves of garlic
            4 T lemon juice (preferably fresh squeezed)
            1 tsp. sea salt
            2 T tahini
            1 T fresh parsley, chopped
            1 tsp. Cumin (or more to taste)
            1 tsp. paprika
            1 T extra virgin olive oil

Blend beans, garlic, lemon juice, salt and reserved juice or water. Add tahini and blend until smooth. Add cumin. Garnish with parsley and paprika sprinkle with olive oil. Serve with veggies and chips or flat breads. Great as a pizza topping and on sandwiches and wraps.



Guacamole
Ingredients:
            2 ripe avacados
            ½ cup minced onion
            1 chili/jalapeno minced
            1 small tomato diced
            ¼ cup cilantro
            2 – 3 T fresh lime or lemon juice
            salt to taste



Combine all ingredients and blend in a blender or a mixer until mixed but not completely smooth. Serve with chips or tacos.
 

 


Black Bean Burgers
         Ingredients:
                  1 15oz. can black beans
                  ¼ cup firm tofu
                  1 cup TVP
                  1 tsp. Cumin
                  ¼ cup chunky salsa
                  small onion, chopped
                  ¼ - ½ green pepper, chopped
                  salt to taste
                  ¾ tsp. oregano
                  ½ tsp. basil

Preparation:
1.    In a blender or food processor, mix beans, tofu, cumin, onion, green pepper and salt.
2.    Transfer mixture to a medium bowl and add salsa, oregano and basil. Crumble the TVP and add to the bean mixture. If it is still too sticky add a bit more TVP.
3.    Form into patties and cook on medium in greased skillet. Enjoy with ketchup, mustard, salsa and veggies!





 Taco Filling
         Ingredients:
            1 1/3 cup TVP
            1 2/3 cup water or vegetable broth
            Braggs liquid aminos
   taco seasoning

1. Place TVP in a medium bowl. Heat the water or broth to boiling then add   
    to the TVP.  Let set 5 – 10 min.
2. Transfer to a medium skillet and add taco seasoning. Add about 1/8 cup          
    olive oil and 3-4 T Braggs liquid aminos.
3. Cook until heated through.

TIP:  I like to add a can of kidney beans or black beans to the mixture for        
        extra flavor and texture.

Yeilds: about 1lb


TIP: You can use this mixture in an Enchilada Casserole by adding a small    
       can of chili peppers to the mixture then layer it with corn tortillas, salsa,
       beans and corn in the following order (in a greased casserole dish):
            Salsa
            Corn tortilla(s)
            Taco mixture
            Beans
            Corn
Repeat in this order starting with the salsa until all the taco mixture is used up. Bake for 30 min at 350 degrees F.



To reconstitute TVP (textured vegetable protein)

         1 2/3 cup TVP

         1 1/3 cup boiling broth

Let set for 5 minutes until all liquid is absorbed and the TVP soft

Just wanted to give you all a list of things you can and cannot have during the Daniel Fast. I will be uploading some recipes this week as well. If you have any questions feel free to e-mail me at cooking@wordoffaithchristiancenter.org

Foods to include in your diet during the Daniel Fast
All fruits. These can be fresh, frozen, dried, juiced or canned. Fruits include but are not limited to apples, apricots, bananas, blackberries, blueberries, boysenberries, cantaloupe, cherries, cranberries, figs, grapefruit, grapes, guava, honeydew melon, kiwi, lemons, limes, mangoes, nectarines, oranges, papayas, peaches, pears, pineapples, plums, prunes, raisins, raspberries, strawberries, tangelos, tangerines, watermelon
All vegetables. These can be fresh, frozen, dried, juiced or canned. Vegetables include but are not limited to artichokes, asparagus, beets, broccoli, Brussels sprouts, cabbage, carrots, cauliflower, celery, chili peppers, collard greens, corn, cucumbers, eggplant, garlic, ginger root, kale, leeks, lettuce, mushrooms, mustard greens, okra, onions, parsley, potatoes, radishes, rutabagas, scallions, spinach, sprouts, squashes, sweet potatoes, tomatoes, turnips, watercress, yams, zucchini, veggie burgers are an option if you are not allergic to soy.
All whole grains, including but not limited to whole wheat, brown rice, millet, quinoa, oats, barley, grits, whole wheat pasta, whole wheat tortillas, rice cakes and popcorn.
All nuts and seeds, including but not limited to sunflower seeds, cashews, peanuts, sesame. Also nut butters including peanut butter.
All legumes. These can be canned or dried. Legumes include but are not limited to dried beans, pinto beans, split peas, lentils, black eyed peas, kidney beans, black beans, cannellini beans, white beans.
All quality oils including but not limited to olive, canola, grape seed, peanut, and sesame.
Beverages: spring water, distilled water or other pure waters.
Other: tofu, soy products, vinegar, seasonings, salt, herbs and spices.
Foods to avoid on the Daniel Fast
All meat and animal products including but not limited to beef, lamb, pork, poultry, and fish.
All dairy products including but not limited to milk, cheese, cream, butter, and eggs.
All sweeteners including but not limited to sugar, raw sugar, honey, syrups, molasses, and cane juice.
All leavened bread including Ezekiel Bread (it contains yeast and honey) and baked goods.
All refined and processed food products including but not limited to artificial flavorings, food additives, chemicals, white rice, white flour, and foods that contain artificial preservatives.
All deep fried foods including but not limited to potato chips, French fries, corn chips.
All solid fats including shortening, margarine, lard and foods high in fat.
Beverages including but not limited to coffee, tea, herbal teas, carbonated beverages, energy drinks, and alcohol.
